Stay Home with Kids Survival Story Part 4 - Baking with kids

Recipes from YVONNE LIM and BAKING HOBBYISTS to engage your kids from Monday to Saturday!

Now that Home Based Learning has ended, how are you planning to keep your kids meaningfully engaged during their May school holidays? Serious About Preschool spoke to celebrity mum, Yvonne Lim and some mummy baking hobbyists to shortlist 6 super easy, fuss-free bakes that you can do with your kids at home! No oven? No problem, an air fryer also can do the job!

Monday: Butter Cookies
Yvonne has been trying out many different recipes during this pandemic. “Baking gives my kids and I a sense of achievement! Most importantly, it keeps them occupied, “, laughed Yvonne. 

When asked to select the simplest recipe that even beginners can try, Yvonne pondered (she had difficulty identifying the easiest one after trying out so many) and finally got back after 2 days: “Butter cookies! Just prepare the shortlist of ingredients, just mix them all together and viola!! Tastes heavenly too!” 

Ingredients:
80g unsalted butter
30g icing sugar
½ egg (optional)
15g ground almonds (optional)
1g salt
120g cake flour

Instructions:
Mix all together to form a dough, use a cookie cutter to cut out shapes, bake at 160 degrees for 20 mins or until light brown.

Tuesday: Banana Chocolate Chips Muffins
Kerin Tan, a mummy home bake, decided that the Banana Chocolate Muffin is the simplest recipe in her collection (actually it’s after we threw out those requiring more ingredients and steps).

Ingredients:
3 large ripe bananas (mashed)
192g cup plain flour
67g castor sugar
67g brown sugar
2 tsp baking powder
¼ tsp salt
1 tsp vanilla extract
75g melted butter
1 egg
175g chocolate chips

Instructions:Preheat oven to 200c (no need preheat if using airfryer)

  1. Line muffin tray
  2. Whisk together salt, sugar, flour and baking powder
  3. Add melted butter, egg, vanilla extract and mashed bananas into flour mixture
  4. Mix until almost all combined
  5. Add chocolate chips and fold 4-5 times
  6. Your batter should still be lumpy, do not over-mix or you will get tough muffins
  7. Divide batter into muffin liners
  8. Bake 13-17 minutes
  9. Allow to cool in pan for 5 mins before transferring to wire rack to cool completely

Thursday: Apple Pie
Makeup artiste, mummy Sherry Yeo puts down her makeup kit and discovers a new found love in the kitchen! She picked the apple pie recipe for us as it is not only healthy and yummy, it is easy to bake!


Ingredients:
4 apples
½ cup sugar
½ tsp cinnamon powder (optional)
Puff Pastry Sheets (Sherry used ‘Borg’s brand. last seen on Redmart and Cold Storage) OR Paratha sheets from Redmart or NTUC can do the job too
Milk or egg wash for brushing on (optional)

Instructions:
1. Cut up the apples and boil them in water or cranberry juice
2. Add in sugar and cinnamon powder
3. Wrap the mix in puff pastry sheets
4. Brush on milk or egg wash
5. Bake for 210c for 25mins (160c for 20mins in airfryer)

Friday: Pandan Cake
Mumtrepreneur Zarah is definitely a baking enthusiast, baking weekly even before the circuit breaker. She highly recommends the Pandan cake as she and her daughter are now baking one DAILY!

Ingredients:
5 Egg Yolks 
65g Coconut milk
30g Castor sugar
45g Pandan juice or pandan essence
60g Coconut oil
90g Cake flour + ¼ salt

Meringue:
6 Egg whites
½ tsp Cream of tar tar (optional) or baking soda
60g Castor Sugar 

Instructions:
1. Preheat oven at 170 degrees. (No need preheat if using airfryer)
2. Whisk egg yolks and sugar till pale yellow.
3. Mix in coconut milk, coconut oil and pandan juice/ essence. Follow by adding in sifted flour and mix well, set aside.
4. Whisk egg whites till foamy, add in Cream of tar tar and whisk for a min. Follow by sugar, whisk till stiff peak.
5. Add in 1/3 of the meringue into the yolk dough and fold well.
6. Pour this mixture by 2 part to the meringue and fold well till the mixture is totally well mixed.
7. Pour into a 21cm chiffon mold, bake with fan-mode at 170 degrees for the 1st 15 mins, then switch to 150 degrees for 40 mins. (no need mold for airfryer)
8. Invert the cake to cool while is hot, unmold it when completely cooled.

Saturday: Mushroom Cheese Pizza
Mummy Corrine Lam has never made a pizza from scratch in her life. She recalled jumping in joy with her kids witnessing the dough rise for the first time. It has never occurred to her that creating a pizza could be that easy, even an air fryer could do the job!

Ingredients:
2/3 cup warm water
¼ ounce active dry yeast
1 teaspoon sugar
1 ¾ unbleached all purpose flour
1 tablespoon extra-virgin olive oil
Grated cheese
Tomato based paste sauce
Button mushrooms
Any other ingredients you like for pizza toppings

Instructions:
1. Combine water, yeast and sugar into a bowl; let stand until foamy, about 5 mins.
2. Add flour, salt and oil and stir until a ragged dough forms
3. Transfer to a lighted floured surface and knead until dough is smooth and leastic, but not sticky, about 5 mins.
4. Transfer to a bowl brushed with oil, turning dough to evenly coat
5. Cover with plastic wrap for 30 to 45 mins, until doubled in volume
6. Create pizza crust and spread on tomato paste sauce
7. Add on grated cheese
8. Add on mushrooms and any other toppings you like
9. Put into airfryer and bake at 160C for 20-25 mins, until crust light brown
